For the main course, Sofrit Pagès
There are few recipes more Ibizan than our beloved Sofrit Pagès, which in many homes is still lovingly prepared for the family at this time of year.
Although each home and municipality makes it in a different way, we suggest this one.
Ingredients – for 4 people
If possible, get them from nearby for a more authentic flavour.
- 1kg of country chicken
- 1kg of lamb meat
- 4 pieces of sobrasada
- 4 pieces of botifarra
- 3/4kg of potato
- 1 lady
- 5 heads of garlic
- 2 bay leaves
- 1 sprig of parsley
- Saffron, salt and pepper
Preparation of Sofrit Pagès
You will need several pots, a frying pan and measuring cups.
- Prepare a picada with the previously fried ñora pepper, 3 or 4 cloves of garlic, parsley and saffron.
- Make a broth with the lamb and another with the chicken.
- In another pot (clay if possible) fry the rest of the garlic, the sobrasada, the bay leaves, the botifarra and a sprig of chopped parsley.
- In a frying pan fry the patató without finishing cooking it. Add it to the pot with food coloring, salt and pepper.
- Add the chopped meat from the broth, a cup of lamb broth and another of chicken broth.
- Cover the pot and let it boil for 15 minutes.
It's ready to serve!
If you don't feel like cooking so much
While Sofrit Pagès would definitely be amazing, you probably don't want to spend that much time making it (we admit, it's not a simple recipe).
So another recommendation is to get a good piece of meat to bake, with the classic side dish of potatoes and an assortment of cold cuts as a starter.
We recommend getting lamb or pork from local producers like Carn & Coop.
This way, you'll be supporting the local agricultural sector, serving a good quality product, and getting an unbeatable flavor.

Traditional Christmas desserts from Ibiza
There are three clear winners in this category that cannot be missed on the 24th, 25th, and you have a sweet tooth the rest of Christmas.
The first are the bunyols (fritters), which here are made with flour, matalahúga, brewer's yeast, lemon, milk and potato. Knead everything together, let it rest, fry it, and then dip it in a plate with sugar.
The next two are usually served together: salsa de nadal and bescuit.
We recommend buying both made by a local artisan or producer to enjoy the most authentic taste of Christmas in Ibiza.
