The Es Tragón project proposes an experience based on the recovery of traditions, raising the value of everything that nature offers us, of the pure, the autochthonous, so that returning to the origin is the novelty, for this we have the help and collaboration of local artisans and producers, historians and biologists.
The restaurant is located in a privileged place, a pine forest that overlooks the Mediterranean, in a villa-type country house, maintaining the essence of the island surrounded by the Mediterranean countryside.
The kitchen of Es Tragón is nourished by this natural wealth since part of the team goes out to collect herbs daily in the vicinity of the restaurant to give them a gastronomic use, herbs such as: rosemary, clover, fennel, pine, vinaigrillo and others of great quality. organoleptic value. produced in our garden with the advice of biologists.

In addition to the native plant part, another proposal in which Es Tragón is involved with biotechnology and sustainability is offering pure water from the sky of Ibiza produced by the atmospheric water generators of the biotechnological botanical park, a water with low mineralization and no contamination biological since it has not gone through any pipe or tank, it is ideal for human consumption and food preparation.
